 Concise Solution: Five Quick Weeknight Dinners


Waitrose & Partners invites you to explore a selection of quick, effortlessly delicious recipes that can be prepared in 30 minutes or less, ideal for busy weeknights during the school term.




Peanut butter imparts a rich, nutty flavour and pairs well with pork, beef, or prawns. Soak wooden satay sticks in water for 30 minutes before use to prevent burning on the grill, or loosely wrap the exposed portion in foil.

Preparation time: 10 minutes plus marinating

Cooking time: 10–15 minutes


Ingredients:


1 tablespoon Thai Green Curry Paste

2 tablespoons Waitrose smooth peanut butter

3 tablespoons wok oil

3 tablespoons Waitrose Natural Yogurt

1 tablespoon Waitrose Cooks’ Ingredients nam pla Fish Sauce

380 g pack 2 chicken breast fillets, cut into 1 cm wide strips

300 g pack Waitrose Coconut Sticky Rice Stir Fry


Method:


Combine the curry paste, peanut butter, 2 tablespoons of oil, yogurt, and fish sauce in a large bowl. Add the chicken strips and mix until evenly coated. Refrigerate for 30 minutes to marinate. Thread onto four wooden satay sticks or skewers.

Place the skewers under a preheated grill for 10–15 minutes, turning once or twice until the chicken is fully cooked (no pink meat).

In the meantime, heat the remaining oil in a frying pan and cook the stir-fry rice for 3 minutes. Serve with the chicken skewers.


Tuna, Olive, and Tomato Pasta

Total time: 15 minutes

Serves: 3-4


Ingredients:

- 200 g Waitrose whole-wheat penne

- 1 x 200 g can Waitrose tuna steak in olive oil

- 1 jar Waitrose Pasta Sauce

- A handful of Waitrose Sliced Black Olives, drained

- 150–200 ml water

- Basil

- Salt and pepper

- Waitrose English Mature Cheddar, grated


Method:

1. Cook the pasta in a large pot for 10 minutes.

2. While the pasta cooks, combine the tuna, chopped olives, and pasta sauce to form the sauce.

3. Reheat the sauce.

4. Add basil and season with salt and pepper to taste.

5. Once the pasta is done, mix in the sauce.

6. Serve topped with grated mature cheddar.


Cheese and Tomato Pizzas

A quick, simple option using ciabatta as the base. Ready in under 30 minutes.


Preparation time: 10 minutes

Cooking time: 20 minutes

Serves: 2-4


Ingredients:

- 1 pack of 2 half ciabattas, halved horizontally

- 4 tbsp Waitrose Bright & Green basil pesto

- 1/2 x 25 g pack fresh basil, shredded, plus whole leaves to serve

- 2 tomatoes, sliced

- 2 x 125 g packs Waitrose Light Mozzarella, drained and sliced


Method:

1. Preheat the oven to 200°C (gas mark 6). Place the ciabatta halves, cut side up, on a baking tray and spread with pesto. Sprinkle with half of the shredded basil.

2. Layer alternating tomato and mozzarella slices on top, season, and scatter with the remaining shredded basil. Bake for 20 minutes or until golden.

3. Scatter with whole basil leaves to serve.
